We’re well into autumn now, and with the weather getting colder, it’s the perfect time to try out some hearty Autumn recipes with a healthy twist.
We’re championing all things British with our UK Veg Box. These recipes will help you to use all the ingredients in your box, without anything going to waste.

Stir Fry
It may seem simple, but this is a healthy meal where you can simply toss a load of leftover veg into a pot and fry. Add in noodles, a sauce and some meat if you’d like, and in less than twenty minutes dinner will be served.
There are no right or wrong vegetables you can add. We’d recommend a combination of carrots, cabbage and broccoli.
Feta and Beetroot Salad
Lots of us will be eating healthily in the run up to Christmas (or at least attempting to!). The important thing to remember is that healthy doesn’t mean bland. This feta and beetroot salad is an excellent example of a healthy and tasty meal.
Toss beetroot and crumbled feta in with spinach, chillies, spring onion and mint leaves. For the dressing, all you need is some rapeseed oil, honey, lemon juice and Dijon mustard. Get the full recipe here.
Sunday Roast
Everyone loves a traditional Sunday Roast. Whether you opt for roast chicken, beef, lamb or go full on veggie, you can definitely make the most of our veg box.
Brussel sprouts, broccoli and cabbage… you could even add a corn on the cob on the side for something a bit different (check out this recipe for honey-drizzled corn).
Finish with a Yorkshire pudding, plenty of roast potatoes, and a generous helping of gravy. That’s British cuisine at its finest!
Kale, Leek and Gruyère Gratin
This perfect winter warmer is best enjoyed on cold evenings, and is sure to go down well with friends and family. Cook the leeks and kale, before making the cheese sauce. Coat the veg in the cheese, and bake the gratin for 15 – 20 minutes.
At 300 calories a serving, this meal is healthier than you’d think, and it doesn’t take long to make either. Get the recipe here.
Carrot Cupcakes
No one can resist dessert, surely?! There’s no better way to use leftover carrots than by baking these delicious cupcakes, complete with cream cheese frosting (arguably the best part of carrot cakes!).
