The sweet potato’s vibrant brother is not easily found in supermarkets. Drier in texture, richer and denser in flavour, it is absolutely worth trying. Its great colour comes from anthocyanins, which can also be found in blueberries.

Wrap in foil and bake. Eat whole or take out insides & mash for modern twist on bangers & mash.

Best stored in a cool, dark place, in a loosely covered bag. Do not refrigerate if you want the full flavour!
