It has narrow leaves which grow off a slender stem and combine the taste of aniseed and mild vanilla. A French favourite, so unsurprisingly goes well with chicken.

Sautee chicken in a white wine sauce, with sprigs of tarragon and whole shallots.

Best stored in a perforated bag in the fridge, or wrapped in damp kitchen towel.
